The restaurant is operated by Fujihashiya, which has poultry farms in Yumesaki-cho and Shikito-cho, Himeji City. Since its opening in 2009, the restaurant has continued to offer the dreamlike menu of “free refills of eggs and rice,” made possible by the fact that it is a farm that raises chickens and rice.
The restaurant’s reputation for deliciousness and affordability has transcended national borders, and now one-third to one-half of its customers are tourists from overseas. The eggs, for which refills are free, are “Yume Sodachi” locally raised eggs from chickens fed carefully selected feed in an elegant growing environment with Mozart’s music playing in the background. The eggs have a mild sweetness and richness, and the yolk’s distinctive rich flavor is concentrated in the yolk.
The egg is cracked down in the center of a bowl of steaming hot rice with bonito flakes dancing softly on top of it. A dash of dashi soy sauce, jointly developed with a soy sauce manufacturer, completes this luxurious “tamakakegohan” (rice topped with eggs).
